I'm not a very experienced cook, that I will freely admit. BUT, I do have one original recipe that I love to make. Its my meatloaf. Yes, I know meatloaf brings back scary memories of the lunch lady slopping a wad of "beef" onto your school lunch tray. But my meatloaf is different! Its actually good!! lol

Mama's Mini Meatloaves

3 lbs ground beef

1/4 cup brown sugar

1 egg

1 cup ketchup

1 cup french's french fried onions

1 sleeve of saltine crackers

Combine all ingredients in a large mixing bowl. Then spoon mixture into muffin tins. Bake at 350 for about 50 minutes or until the center is no longer pink. Then make an easy sauce to go on top by combining 3/4 cup of ketchup and 2 tbsp brown sugar in a bowl and microwaving for 1 minute. Pour this on top of the mini meatloaves then bake another 10 minutes. My kids love having their own individual meatloaves for dinner.

This is my fave recipe by far. SO I entered it in French's 2009 Cookoff. Do you have a favorite recipe you'd like to share?

Menu Planning Monday

Following the lead of my good friend, Karrisa , I've decided to give this Menu Planning Monday thing a try. I'm terrible when it comes to planning and being organized, but I want to be better, so this will be great practice! I'll just start with a weekday menu, since our weekends can be crazy busy and I never know in advance what we will be doing. And before you see my menu, please know that I am in no way even going to try to convince you that I am a domestic diva. All of my meals are super simple and rarely made from scratch. I wish I was a Rachel Ray or something, but ummm no.

Monday - Tonight we are having Oven baked pork chops, (I will prob use a shake n bake flavoring on these, but you could just add salt, pepper and garlic and it would be good too), rice a roni, sweet corn and brown n serve rolls.

Tuesday - I'm going to start a roast in the crock pot in the morning (it was on sale this week at my local grocery store), I'll add sliced potatoes and baby carrots right before its done. Serve it over white rice.

Wednesday - Chicken & Rice Casserole (my grandma's recipe - shredded chicken breast, cream of chicken soup, sour cream and rice - top with crushed ritz crackers and lay thin slices of butter on top)

Thursday - Breaded Chicken sandwiches with marinara sauce and provolone cheese, roasted garlic parmesan potatoes

Friday - Homemade pizzas. The kids love making their own. I use refrigerated pizza crust dough and let them each pile on as much sauce, cheese, pepperoni and sausage as they want.

So there you have it! My first attempt at Menu Planning Monday. We'll see how it goes! Thanks for the idea Karrisa!

Back to School

We've got just 2 short weeks until the kiddos head back to school. Our oldest, Brandon, will be starting middle school. I feel so...old! LOL The girls will be starting 3rd and 6th grade. We've gotten quite a few school supplies, just picking up things here and there as they go on sale for 1¢ or free after rebate. I've also picked up a few uniform tops, but no pants or shorts just yet. Waiting on another good sale.

We've decided to have the girls take their lunches this year. I invested in some super cute lunch bags (they look like purses) and some insulated thermos' for keeping foods warm or cold. Hoping this saves us some money. We were spending $45 a week last year on school lunches!

The kids are excited. They cant wait to see their old friends again. Mama cant wait for peace and quiet in the house! heehee

Middle School, eek! Locker Combo's

My 12 yr old son starts middle school this year. 7th grade!! My BABY! Where did the time go?

Better suck it up and just accept that he isnt a baby any longer. :-(

We've scheduled to get his new shots needed to enter 7th. We've gotten a new backpack and we are working on the last of his school supplies. He keeps bugging me about a lock for his locker. I dont know which kind to get, they are all the same, right? NO!

I just found out about two new locks from MasterLock (the kind I used as a kid). They've got a speed dial, where the kids can set their own combination and it opens with up-down-left-right movements and can be customized with shapes, letters, numbers or whatever the child can remember easily.

They also have one that you can set your own combo, no having to recite the preassigned combo over and over and over to themselves and joping not to forget on that first day in the hall.

Heading to WalMart tonight to pick one up for him. Phew! One more worry crossed off the list.

Today's Hank Tale:

It was a nice long holiday weekend. We all enjoyed some time off. And Hank took himself a little vacation too....

Yesterday evening we left the house to run some errands. We decided to let the doggies out in the back yard while we were gone. So we put them out on their little tie out nylon chains, filled each of their bowls with water and we left. (Oh, I should mention, we don't leave them on their chains all day. These are indoor poochies they don't get much excercise, so this is their outside playtime. They are both diggers, so this is why we use the tie outs.)

We run our errands, get back home and let the doggies in. Make that, one doggy. Hank and his chain are missing. I swear he is a canine Hoodini.

Now the family loads into the car and off we go to Hank's usual vacation spot. Its about 2 and a half blocks away, a nice 2 story home, complete with doggy door, owned by 5 dogs and their master. :-) I have no idea why, but if he ever gets out, this is where we can find him. So he's now home, safe and sound. No chain though. Hmm...wonder what he did with it....

He's a Miniature Pinscher. He was a stray we rescued (as was Spike). No stories right now. Hank is tired, he just got back from a 24 hour vacation, more on that tomorrow. :-)

My Mother's Day Surprise

Isnt she a beauty? This was hubby's Mother's Day gift to me. I have really been needing (okay, wanting) a new phone, but I knew it was out of our budget for now. Found this on the Betty Crocker website, looks easy and yummm!

1/2 cup butter or margarine
1 package (1 oz) Old El Paso® taco seasoning mix
1 1/2 lb beef boneless sirloin tip steak, cut into thin bite-size strips
1 can (16 oz) Old El Paso® refried beans
12 Old El Paso® flour tortillas for soft tacos & fajitas (6 inch; from two 8.2-oz packages)
2 cups shredded Cheddar cheese (8 oz)
3 medium green onions, thinly sliced (3 tablespoons)
1 can (10 oz) Old El Paso® enchilada sauce
1 cup shredded Mexican cheese blend (4 oz)

1. Heat oven to 400°F. In 10-inch skillet, melt butter over medium heat. Stir in taco seasoning mix. Add beef strips; cook 5 to 6 minutes, stirring occasionally, until desired doneness; drain.
2. Meanwhile, place refried beans in microwavable dish. Microwave uncovered on High 2 minutes, stirring once or twice.
3. Spread each tortilla with refried beans to within 1/4 inch of edge. Top each with beef, Cheddar cheese and onions. Roll up, folding in sides. In ungreased 13x9-inch (3-quart) glass baking dish, place burritos with seam sides down. Pour enchilada sauce over burritos. Sprinkle with Mexican cheese blend.
4. Bake uncovered 7 to 12 minutes or until burritos are thoroughly heated and cheese is melted.

You can register and allocate your savings to your children, your grandchildren, niece, nephews, friends children, etc.

Each month new coupons are available to download to your grocery store cards. Just go to http://www.upromise.com/ and once you register or sign in, click on the tab at top that says "Earn Rewards" and under that click "eCoupons".

When you purchase those particular products, the savings will NOT come off your total at the register, BUT they will be deposited into your Upromise account instead. The savings really add up!

Last night I got the strangest phone call on my cell as hubby and I were watching tv. It was from the little boy next door, he's about 11 or 12. It went something like this:

Me: Hello?
Neighbor Boy: Hi, this is ____ .
Me: Oh, hi ____. What's up?
Neighbor Boy: Nothing. Can you come over to my house tomorrow?
Me: Yeah sure, why?
Neighbor Boy: Idunno.
Me: Umm ok. Do you need me to talk to your parents or something?
Neighbor Boy: No.
Me: Umm, k. So why do you need me to come over?
Neighbor Boy: Idunno.
Me: Okay, well, I guess I can.... What time?
Neighbor Boy: About 4:30.
Me: Okay I will be over at 4:30 tomorrow then.

I turned to hubby and we were both like WTH? and LOL! It was the weirdest thing. Then I decided or son must have given him my number to prank call or something. We went back to watching tv.

Son comes in about half an hour later and asks if Neighbor Boy called me. I said Yes he did and told him the conversation. I asked what it was all about, what was going on. My son, the funny little guy he is, he is just cracking up at this point. So then he starts explaining to me that Neighbor Boy had been telling all of his friends that he has this new girlfriend and no one believed him. So he asked my son for the girl's number (since she is a friend of my daughter's) and my son gave him my number as a prank! So this poor Neighbor Boy thought he was calling his little *girlfriend* asking her to come over! Too freaking funny! I mean hilarious! Hope my son explains everything to him at school today. Poor little guy.

Opened my front door to find this sweeeet package on my porch! 7 pints of Haagen Dazs Five Series ice cream and enough spoons & cups for the whole family to try them all out! I received this awesome treat thru SheSpeaks.com where I get to evaluate cool products and give my honest opinion.

First, what an awesome item to get to test out!! Who doesn't LOVE ice cream?!! I received one pint of each of these flavors:

Milk Chocolate
Vanilla Bean
Mint
Brown Sugar
Coffee
Ginger
Passion Fruit

The neatest thing about this new Five Series is that they are made with just 5 ingredients which are all natural - Milk, Cream, Sugar, Egg Yolks, and the actual flavor of the ice cream. So cool because these days, you can't even read the ingredients on the packaging of most of the foods we eat. Leave it to Haagen Dazs to get back to the basics, the simple pleasures.

While I loved the mint, vanilla bean and milk chocolate flavors, my family and I could not appreciate the brown sugar, coffee, ginger or passion fruit. Hey, we all have unique tastes right? Let me just say, I *LOVED* the vanilla bean. And with it being all natural and having just 5 ingredients, I didn't feel AS guilty while eating it. :-)
